Okay here we go...this I made a few days ago.

I took some really lean ground turkey and mixed it with some mushrooms,onions,and garlic. I took a no sugar added spag. suace and mixed in the ground turkey.
I than took some eggplant and fried it in EEVO. Topped it with the sauce and some feta chesse a sprinkle of parmesan and voila.
And now for tonight I had to GRILL. it's Ribs with a side of grilled vegetable brousuto(*sp)

all I did was use my special rib rub(pm for recipe alot of ingredients to post) than griled the ribs and than used a smoked chiptole BBQ sauce sweetened with a bit of honey.
for the veggies ( got recipe from bobby flay)I just cut them in half and grilled them..than took them and made bite sized pieces. Took fresh oregano and parsely chopped added olive oil and tooseed it into the veggies...mmmm good
veggies were...yellow and zuchini squash, red,yellow,and green peppers, Vidalia onions(can use red), and eggplant. also some campari tomatoes(larger than cherry but still small and VERY good)
